Here it is. The final product. What we have here is pork tenderloin stuffed with dried tropical fruit. It is served on a sweet potato pancake and creamed spinach. It is accompanied with a mixed berry coulis.
So now, I have only one more practice left. It is more for timing and plating practice. I have to say that I am happy with this plate. I hope I can contend at least.
